This is my weeknight dinner safety net. Whatever vegetables are in the crisper, a quick marinade, and a screaming-hot pan get you dinner faster than the delivery driver could.

I get asked about this one constantly — at dinner parties, in the grocery store line, in the comments. It's the recipe my readers cook on repeat, the one I keep coming back to on the weeks when cooking feels like a chore. Every step here has been tested, tweaked and re-tested in a real home kitchen until it works reliably on a normal stove with normal ingredients.

The version below is the one I make at home. I've laid out exactly how I prep, the timing that actually works, the ingredient swaps I trust, and the small finishing touches that make it taste like you've been cooking for years. If you're new here, welcome — and if you're a regular, you already know I won't waste your scroll.

Deep Dive

The ingredients, explained

Most of what makes this recipe work is in the small choices at the grocery store. A few of these ingredients are worth slowing down for — here's what to look for and what to swap if you're in a pinch.

Chicken thighs: Thighs stay juicy and forgive a high-heat sear better than chicken breast. Breast works but slice it thinner.

Cornstarch: Tossing the chicken in cornstarch creates that velvety, restaurant-style coating.

Oyster sauce: Adds umami depth; mushroom "oyster" sauce works for a vegetarian-friendly version.

High-smoke-point oil: Avocado, peanut, or refined vegetable oil. Don't use olive oil — it'll smoke and turn bitter.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs, sliced into 1/2-inch strips
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch (for sauce)
  • 3 tablespoons neutral oil, divided
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 2 bell peppers, sliced
  • 1 large carrot, julienned
  • Steamed rice and sesame seeds, to serve

Instructions

  1. 1In a medium bowl, toss the chicken with 2 tablespoons soy sauce, 1 tablespoon cornstarch, and sesame oil. Let marinate while you prep everything else, at least 10 minutes.
  2. 2In a small bowl, whisk together the 1/4 cup soy sauce, honey, rice vinegar, oyster sauce, and 1 teaspoon cornstarch. Set the sauce aside.
  3. 3Heat 2 tablespoons oil in a large wok or 12-inch skillet over high heat until shimmering. Add the chicken in a single layer and let it sear undisturbed for 90 seconds before tossing. Cook 3 to 4 more minutes until golden and cooked through. Transfer to a plate.
  4. 4Add the remaining 1 tablespoon oil to the pan. Add the ginger and garlic and stir-fry for 20 seconds, until fragrant.
  5. 5Add the broccoli, bell peppers, and carrot. Stir-fry over high heat for 4 minutes, tossing constantly, until crisp-tender and bright. Splash in 2 tablespoons of water if the pan gets too dry — it'll steam them slightly.
  6. 6Return the chicken to the pan. Pour in the sauce and toss everything for 1 to 2 minutes, until the sauce thickens and glazes everything glossily.
  7. 7Serve immediately over steamed rice, topped with sesame seeds.

Emma's Pro Tips

  • High heat is the entire game. A medium-hot pan steams vegetables; a smoking-hot pan stir-fries.
  • Cut everything roughly the same size so it cooks at the same rate.
  • Don't crowd the pan — work in batches if needed.
  • Get your sauce mixed and within reach before you turn on the heat.

This recipe is a strong foundation that takes well to riffing. Here are a few of the variations we've tested in the Saffron & Sage kitchen and signed off on.

Cashew chicken

Black bean chicken

Stir 2 tablespoons Chinese fermented black bean sauce into the sauce mix.

Spicy ginger

Add 1 tablespoon sriracha and an extra teaspoon of grated ginger.

On the Table

Serving & storing

How to serve

Serve easy chicken stir fry the way we do at home: in warm bowls or on a heated plate, with the toppings called for in the recipe card and a little extra of whatever finishing touch you love most. This recipe scales generously — a half-batch fits two comfortably, and a double-batch holds up well for company.

How to store

Leftovers keep in an airtight container in the fridge for 3 to 4 days. Reheat gently — most things in this category are happiest warmed on the stovetop with a splash of liquid rather than blasted in the microwave. See the FAQ below for freezing notes.

Reader Questions

Frequently asked

Can I use chicken breast?

Yes — slice it thin and don't overcook. Thigh is more forgiving.

What other vegetables work?

Snap peas, baby corn, mushrooms, bok choy, asparagus — basically anything that holds shape under high heat.

Can I make the sauce ahead?

Whisk it together and refrigerate up to a week. Stir before using.

Gluten-free?

Use tamari or coconut aminos instead of soy sauce, and check that the oyster sauce is labeled GF.
