Most of what makes this recipe work is in the small choices at the grocery store. A few of these ingredients are worth slowing down for — here's what to look for and what to swap if you're in a pinch.
Chicken thighs: Thighs stay juicy and forgive a high-heat sear better than chicken breast. Breast works but slice it thinner.
Cornstarch: Tossing the chicken in cornstarch creates that velvety, restaurant-style coating.

Easy Chicken Stir Fry

Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs, sliced into 1/2-inch strips
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon toasted sesame oil
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch (for sauce)
- 3 tablespoons neutral oil, divided
- 1 tablespoon grated fresh ginger
- 4 cloves garlic, minced
- 1 head broccoli, cut into florets
- 2 bell peppers, sliced
- 1 large carrot, julienned
- Steamed rice and sesame seeds, to serve
Instructions
- 1In a medium bowl, toss the chicken with 2 tablespoons soy sauce, 1 tablespoon cornstarch, and sesame oil. Let marinate while you prep everything else, at least 10 minutes.
- 2In a small bowl, whisk together the 1/4 cup soy sauce, honey, rice vinegar, oyster sauce, and 1 teaspoon cornstarch. Set the sauce aside.
- 3Heat 2 tablespoons oil in a large wok or 12-inch skillet over high heat until shimmering. Add the chicken in a single layer and let it sear undisturbed for 90 seconds before tossing. Cook 3 to 4 more minutes until golden and cooked through. Transfer to a plate.
- 4Add the remaining 1 tablespoon oil to the pan. Add the ginger and garlic and stir-fry for 20 seconds, until fragrant.
- 5Add the broccoli, bell peppers, and carrot. Stir-fry over high heat for 4 minutes, tossing constantly, until crisp-tender and bright. Splash in 2 tablespoons of water if the pan gets too dry — it'll steam them slightly.
- 6Return the chicken to the pan. Pour in the sauce and toss everything for 1 to 2 minutes, until the sauce thickens and glazes everything glossily.
- 7Serve immediately over steamed rice, topped with sesame seeds.
